Quick, Healthy, Yummy Granola Bars

Hello again! So this recipe I'm gonna share with you is one of my personal favorite snacks. These granola bars never last long in our house. They're easy and quick to make and to top it off, they're absolutely delicious! To make these you're going to need:

  • 1 cup oatmeal
  • 1/2 cup peanut butter (or any other nut butter)
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 2 tbs chia seeds (optional)
  • 1/2 cup mini chocolate chips (You can use regular if you need to. That's what I did this time around)
  • 1 tsp vanilla
  • Optional: dried fruits such as cranberries, blueberries, etc.


Here are the instructions:
  • Start with that gooey peanut butter, honey, and oatmeal and mix them up in a bowl.
  • Then add in your coconut. Sweetened or unsweetened. Whichever you prefer.
  • Now it's time to add your mixins! The chocolate chips sweeten it up a little bit and the flaxseed and chia seeds add a healthy flare. You can really add whatever you want. This recipe is great because it forms to whatever is in your pantry. You could throw in nuts, dates, raisins, or even Nutella! Cocoa powder also tastes great in these.
  • Now add your vanilla.
  • Mix until it's all been incorporated and let it chill in your refrigerator for about thirty minutes.
  • Once that is done, you now have several options. You can roll it into balls for a fun treat for your kids or friends, press it into a pan like I did for a more traditional granola bar, or you can just eat it right out of the bowl like I do sometimes. 
  •  Store refrigerated in an airtight container for up to a week. 

*Make sure you grease your pan if you are going to make it into bars. I like to use coconut oil. Also, in the pictures shown, the recipe was doubled. You might want to consider this if you intend on feeding more than just a couple of mouths. (Or if you simply want a lot for yourself.)

Okay. So there you have it. This is a tried and true recipe that anyone can make and all will love.
